A quick and tasty family pleaser inspired by French cuisine. Baked fish fillets covered in garlic and lemon-infused bread crumbs. Simple, quick, effective. Serve on a bed of yellow dahl or creamed corn.
Ingredients for 4 people:
- 4x white fish fillets
- 50g of hard bread, cut into small cubes
- 40g of unsalted butter
- 1 garlic clove
- 2 shallots
- 1dl of white wine
- 1 bunch of parsley, finely chopped
- 1/2 lemon
- Extra virgin olive oil
- Salt and freshly ground black pepper
Method:
- Heat the oven at 200 °C
- In a food processor, place your bread cube and pulse until crumbled, then set aside
- Finely chop the garlic and shallots in the emptied food processor or using a sharp knife
- Heat a pan to medium heat and add the garlic and shallots to cook for 5 minutes
- Add the white wine, lemon juice and parsley to the pan and mix well, then season with salt and pepper to taste
- Take the pan off the heat and mix in the breadcrumbs until you get an even crumble
- Drizzle some olive oil in an oven proof dish and place the cods, then cover them with the bread crumb mixture and drizzle them with olive oil
- Bake for 15-20minutes until golden
- Serve with rice or green salad
