We source our sashimi-grade salmon from Loch Duart, an independent small-scale salmon farm on the Northwest Coast of Scotland rearing the best-tasting salmon with the lowest possible impact on the environment. Stocks of wild salmon and trout are so low that farming is the only possible option for us. Loch Duart broodstock originates from the wild salmon that have swum in Scottish waters for millennia. Loch Duart salmon’s wild heritage, high marine content diet, and slow growth (three months longer than average) result in a taste and texture indistinguishable from wild salmon. With a deep, savoury flavour with a firmer, meatier texture, Loch Duart salmon’s delicate fat-marbling delivers an exquisite, buttery mouthfeel with double the Omega-3 compared to others.
