Quick and easy grilled monkfish fillets in a butter lemon garlic sauce

A quick and easy 15 minute recipe to make grilled monkfish fillets topped with a butter lemon garlic sauce. Serve with a fresh green salad for a light meal or add a side of white rice, chips or mash.

Ingredients for 2-3 people:

  • 1.5kg of monkfish - filleted (yields about 500g monkfish fillets)
  • 1 lemon
  • 1 garlic clove, finely chopped
  • 80g unsalted butter
  • Handful of fresh flat parsley leaves, chopped

Method:

  1. Preheat the oven to 220°C. Pat the fillets dry with kitchen paper towels and season them salt and freshly ground pepper.
  2. Heat a pan to medium-high with a little olive oil and place monkfish to sear them for a couple of minutes on each side. Tip excess oil in an oven-proof dish, place the fish on top and roast until cooked for about 8 mins. When cooked through, the fillets will be opaque and flake easily with a fork.
  3. While the fish roasts, make your sauce by melting butter in a pan on low heat, then add the garlic and cook until just transparent. Finely grate the zest of your lemon and juice half of the lemon to add them to the sauce alongside the parsley leaves (reserving a few for garnish). Let simmer for a minute or so to reduce to desired consistency. Take the saucepan off the heat and season with salt and pepper to taste.
  4. Plate the monkfish immediately, top with the sauce and garnish with parsley leaves.
  5. Enjoy!
