What's the secret behind our live room?

We are lucky to have our unit right on Paignton harbour, and thanks to the engineering of past crab and lobster heroes, we pump sea water directly from the sea into our shellfish tanks daily thanks to a pump that goes underground straight to the sea. This means our lobsters and crabs are always sitting in super clean water.
Not only that, but our fishermen all have keys to our unit so they can just drop them in the tanks themselves, so the time lobsters are out of water is very minimal. Pictured below is MFV Raider III on its way off to catch lobsters around Torbay. We've created an amazing set-up to keep lobsters and crabs to the higher standard and Captain Dave looks after our live room like it's his child making sure all the shellfish is in top condition. 
Top tip once they reach your home: just like langoustines, we recommend popping lobsters in the freezer for 1-2hrs to stun them before cooking. Clams, cockles and mussels can be all stored in the fridge for two days from delivery (just place them into a large bowl and cover with a wet cloth before popping them in the fridge). You can also freeze them to cook at a later date.
