Bacon-wrapped scallop skewers with sage dressing

Ingredients for 2:

  • 6x hand-dived scallops
  • 6x slices of bacon
  • 4x wooden or metallic skewers 
  • Salt & black pepper to taste

For the dressing

  • 3 springs of sage, chopped
  • 2 garlic cloves, crushed and finely chopped
  • 50ml extra virgin olive oil

 

Method:

1. Prepare the dressing by mixing the olive oil, sage and garlic in a small jar or bowl.

2. Prepare the scallops by rinsing them, patting dry with kitchen towel and adding a small touch of salt (be conservative as the bacon has plenty salt). In a small bowl, gently toss the scallops in 2 tablespoons of dressing, then let marinate in the fridge for 15-20 minutes.

3. Prepare your skewers by wrapping each scallop in a slice of bacon, then slide 3 scallops per skewer. 

4. Grill the skewers in an oiled BBQ or grilling pan until golden, about 3 minutes, then turn and grill the other side another 3 minutes.

5. Place the scallop skewer on a chopping board or serving plate with a drizzle of dressing, plus some extra for dipping.
