Honey soy & lemon marinated BBQ fish skewers

Perfect for a BBQ or a casual dinner with friends and family, these chunky fish skewers are marinated in a rich blend of olive oil, soy sauce, lemon juice, honey and a medley of spices. Serve them with a side of rice, quinoa, or a fresh salad for a complete wholesome meal. 

Ingredients for 4:

  • 8x white fish skewers (or 4x 250g firm white fish fillets for you to thread in skewers) 
  • 2 tablespoons soy sauce
  • 2 tablespoons freshly squeezed lemon juice 
  • 1 tablespoon honey
  • 2 cloves garlic (minced)
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • 2 tablespoons fresh parsley (chopped)
  • Zest of 1 lemon

Method:

1. Prepare the Marinade: In a bowl, whisk together olive oil, soy sauce, lemon juice, honey, minced garlic, smoked paprika, ground cumin, black pepper, salt, cayenne pepper (if using), chopped parsley, and lemon zest.

2. Marinate the Fish: Place the fish skewers in a large sealable container or shallow plate. Pour the marinade over the fish, ensuring all pieces are well-coated. Seal the container or cover the dish and refrigerate for 15 minutes.

3. Grill the Skewers: Lightly oil the BBQ grill grates to prevent sticking. Place the skewers on the grill for about 3-4 minutes per side, or until the fish is cooked through and flakes easily with a fork. 

4. Remove the skewers from the grill and transfer them to a serving platter.
Garnish with fresh parsley and serve immediately. These skewers pair well with rice, quinoa, or a fresh salad.
