BBQ Lobster with butter garlic lemon sauce

Grilling lobster combines the sweet tender meat with smokey flavours that elevate this classic seafood dish. Mastering a BBQ lobster with a rich butter garlic sauce brings out the best in this delicacy, creating a mouthwatering experience that's perfect for summer gatherings. 

Ingredients:

  • 2x fresh Lobsters
  • Extra virgin olive oil
  • 1 lemon, cut in wedges for garnish
  • Sea salt and freshly ground black pepper

 

For the sauce:

  • 50ml extra virgin olive oil
  • 100g unsalted butter, melted
  • 2 cloves garlic, crushed
  • 1 lemon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Fresh parsley
  • Sea salt and freshly ground black pepper

Method:

1. Stun your lobsters in the freezer for 1hr. Split lobster in two halves with a sharp knife and give it a little clean, then crush its claws with the back of your knife. Brush them with olive oil and then season with a touch of salt and black pepper

2. Fire up the BBQ, let the flames die down and then slightly oil the grates for direct grilling over hot coal (slightly around the edges of the BBQ coals or fire).

3. Prepare your sauce: in a small bowl, mix the melted butter, garlic, 1 lemon juice, paprika, and cayenne. 

4. Place the lobster flesh side down on the grill and cook for 4 minutes with the lid down if you have one or until the meat starts to go white and the shell pink with a slight char. Flip the lobsters over and baste with the sauce on the flesh side evenly, reserving half of the sauce for serving. BBQ for another 5 minutes until all the butter is melted and the lobster is cooked through and juicy.

5. Serve with the remaining sauce and a lemon cut in wedges, and with some hot sauce on the side for those who like a kick.
