A delicious and easy recipe for grilled octopus finished with a Mediterranean touch to it. Drizzle with olive oil and fresh lemon juice, and serve with a side of green salad or homemade hummus to balance the rich octopus pieces beautifully.
Ingredients for 4:
- 1 octopus (about 1kg), thawed overnight in the fridge
- 2 tablespoons kosher salt
- 1 wine cork
- 2 tablespoons extra virgin olive oil
- 1 lemon
- 1 tablespoon minced fresh parsley
- Sea salt and freshly ground black pepper, to taste
Method:
1. Rinse the thawed octopus thoroughly. Bring a large pan of salted water to a boil and add a whole peeled onion. Reduce the heat to a simmer, cover, and cook until the octopus is tender, about 40-50 minutes. Remove, drain, and cut into large pieces
2. Preheat your BBQ grill to medium-high heat, then lightly oil the grate
3. Grill octopus until charred on all sides, about 4 minutes each side
4. Remove from heat, slice into pieces, and plate with a drizzle with olive oil and fresh lemon. Serve with a side of green salad or homemade hummus.
