Ingredients (for 2 people)
- 250g of crab meat 50/50
- 2 tablespoons ginger, finely chopped
- 2 cloves garlic (minced)
- 800g of cooked white rice
- 1/4 teaspoon white pepper
- 3 tablespoons fish sauce
- 1 tablespoon soy sauce
- 2 eggs, beaten
- 2 spring onions
- Bunch of coriander, chopped
- 4 lime wedges (optional)
- Chilli oil (optional)
Method:
- Heat cooking oil in a wok-style pan over medium-high heat, then add ginger and garlic cooking until just before it gets golden
- Once cooked increase the heat to high and add the rice, soy sauce, fish sauce and a sprinkle of white pepper, mixing everything together to distribute the sauces evenly
- Stir in the beaten eggs until cooked, then add the crab meat (reserving some white meat for garnish if desired) and gently toss for a couple of minutes until the crab is warmed through
- Sprinkle the green onions and coriander (again, saving some for garnish) and mix everything gently before plating
- Garnish with the crab if using and coriander
- Add in a squeeze of lime or chilli oil if using
