For another super speedy and beautiful meal, try our premium smoked salmon delicately tossed in fresh fettuccine in a light mascarpone sauce infused with herbs and lemon. The steamy pasta slightly cooks our smoked salmon which complements the freshness of the lemon and herbs for a surprisingly light dish.
Ingredients for 4
- 150g of handsliced smoked salmon, cut in large strip
- 400g of pasta, we recommend tagliatelle or fettuccine
- 1.5dl of single cream
- 150g of mascarpone
- 1/2 lemon, zested
- 50g Parmesan, grated
- 1 teaspoon of dill (or chives work too)
- Salt and black pepper to taste
Method:
- Get your pasta cooking as per pack instructions
- In a large saucepan, combine the cream and mascarpone along with the zest of half a lemon, stirring until well combined. Bring the mixture to a boil, then remove from heat.
-
Stir in the grated Parmesan cheese and half a teaspoon of dill into the sauce (stick to a small amount not to overpower the sauce or opt for chives), then season with salt and freshly ground black pepper to taste.
- Using pasta tongs, transfer the cooked pasta directly into the saucepan, tossing gently to coat it evenly with the sauce.
- Carefully fold in the slices of smoked salmon with the pasta using the tongs.
- Serve immediately, garnishing each plate with smoked salmon slices picked from the sauce and a sprinkle of fresh dill if desired.
- Enjoy!
