Garlic-Infused Fried Whitebait

The ultimate crispy fish snack for your TV watching gets a garlic twist. Dip in mayonnaise, tartare sauce or make the fish without garlic to serve it with a quick aioli sauce (make it by blitzing 2 garlic cloves with 1 teaspoon of lemon juice and 3 tablespoon of mayonnaise, then salt to taste). 

Ingredients

  • 454g Henderson white bait, thawed overnight in the fridge
  • 2 cloves of garlic
  • 200g flour
  • Salt to taste
  • Oil for frying

Method

  1. Peel the garlic and put in a food processor with 
  2. In a bowl, mix the flour and processed garlic
  3. Heat the oil in a frying pan over medium heat
  4. Pat the whitebait with a paper kitchen towel and coat in the garlic-infused flour, shaking off any excess.
  5. Fry the whitebait in the hot oil until golden brown, about 2-3 minutes on each side.
  6. Remove the whitebait from the pan and drain on paper towels.
  7. Serve the garlic-infused fried whitebait hot.

Tip

Make sure the oil is hot enough before adding the fish to ensure a crispy finish.
