Ingredients
- 454g Henderson white bait, thawed overnight in the fridge
- 2 cloves of garlic
- 200g flour
- Salt to taste
- Oil for frying
Method
- Peel the garlic and put in a food processor with
- In a bowl, mix the flour and processed garlic
- Heat the oil in a frying pan over medium heat
- Pat the whitebait with a paper kitchen towel and coat in the garlic-infused flour, shaking off any excess.
- Fry the whitebait in the hot oil until golden brown, about 2-3 minutes on each side.
- Remove the whitebait from the pan and drain on paper towels.
- Serve the garlic-infused fried whitebait hot.
Tip
Make sure the oil is hot enough before adding the fish to ensure a crispy finish.
