Looking for a quick and easy way to enjoy fish fillets that will satisfy the whole family? Packed with the bright flavours of garlic, lemon, and juicy tomatoes, this Mediterranean-style fish fillet tray bake is not only healthy but also incredibly simple to prepare. Serve it with fluffy couscous for a complete, wholesome dinner that everyone will love.
Ingredients for 4x:
- 4 white fish fillets
- 2 garlic cloves, peeled and crushed
- 1/2 onion, peeled and thinly sliced
- 250g mixed baby tomatoes
- 1/2 lemon cut in thick slices
- 1/2 lemon, to drizzle
- Fresh thyme
- A touch of cayenne pepper, to taste
- Sea salt
Method:
1. Heat the oven to 200°c
2. Pat the fish fillets dry with a kitchen towel and season well with salt and cayenne pepper
3. Heat some olive oil in a pan to medium and cook the onion and garlic until transparent, about 3 minutes. Remove from the heat and spread the onion garlic and olive oil on an oven-proof dish.
4. Nest in the fish fillets, tomatoes and lemon slices evenly on top, spread some thyme and finish by drizzling with extra olive oil and squeeze of half the lemon left
5. Place in the oven to cook for 15 minutes until the fish is cooked through (it will flake easily with a fork then). If the pan dries out before it's fully cooked, add a little bit of water or fish stock
6. Serve with lemon wedges and fluffy couscous
