Roasted Whole Salmon Side Marinated In Honey Butter And Lemon

 

Your weekend lunch has never tasted so good with this oven-roasted whole salmon side marinated in honey butter and lime served with melt-in-the-mouth potatoes.

Ingredients for 4-6 people:

  • 1/1.5 kg whole side of Scottish salmon
  • 3 large potatoes, peeled and cut in 2cm discs
  • 180g unsalted butter melted
  • 6 garlic cloves, thinly sliced + 2 garlic cloves crushed and cut in half
  • 10 tbsp honey
  • 1/2 bunch of fresh parsley, finely chopped
  • 2 lemons
  • Extra virgin olive oil
  • 1 teaspoon paprika 
  • 1 fresh red chilli, cut in slices, optional
  • Sea salt and freshly ground black pepper

Method:

1. Pre-heat the oven to 200 C

2. Part-boil your potato discs for 12 minutes, then drain and set aside

2. Prepare the marinade: in a bowl, mix the melted butter, garlic, honey, parsley, juice of 1 lemon, paprika and a touch of salt and black pepper

3. In a large baking tray slightly greased or lined with parchment paper, scatter your potatoes, crushed garlic on top and using red chilli, then drizzle with olive oil. Pat your salmon dry and place skin-side down on top of the potatoes

4. Pour the marinade all over the salmon side, then scatter the other lemon cut in wedges around it 

5. Roast in the oven for about 25 minutes, basting half-way through, checking the salmon is nicely cooked through and slightly charred

6. Serve pipping hot, sprinkling some optional fresh herbs like thyme
