Speedy Fish Balls

Ready in 20 minutes or less if you use an air fryer, they're the perfect snack when having drinks in the garden, starter or lunch bite if paired with a fresh green salad or chips.

Serve with your favourite sauce - such as a tartare or aioli - or just lemon wedges, they're a super tasty treat the whole family will enjoy.

Ingredients for 4:

  • 400g white fish fillets
  • 1 medium potato, pealed and cut in cubes
  • 150ml milk
  • 1 leek, finely chopped
  • 1 tbsp garlic granules
  • 1 lemon, zested
  • 2 eggs
  • 80g panko breadcrumbs
  • Handful of fresh parsley, finely chopped
  • Extra virgin olive oil
  • Sea salt and freshly ground black pepper

For the tartare sauce

  • 10 tbsp mayonnaise
  • 3 tbsp capers, chopped
  • 3 tbsp gherkinschopped
  • 1 small shallotchopped
  • Squeeze of lemon juice
  • Sea salt and freshly ground black pepper

For the aioli 

  • 8 tbsp mayonnaise
  • 5 medium cloves garlic, pressed
  • 1/2 lemon, juiced
  • 1/4 tsp Dijon mustard
  • Sea salt
 

Method:

1. Pre-heat your air fryer (or an oven) to 180C.

2. Boil the potato for 7 minutes or until cooked through, then set aside.

3. In the mean time, poach the fish: place it in a small saucepan to cover it with the milk and season with salt and black pepper before gently simmering for 7 minutes or until cooked through (it will flake easily once done). Drain the milk and place the fish in a plate to flake it with a fork and set aside.

4. In a large mixing bowl, add the potato and mash it, before adding in the fish, leek, garlic granules, lemon zest, parsley, a pinch of salt and freshly ground black pepper. Mix everything until combined into a smooth paste.

5. In the mean time, roll your fish balls by diving the mixture into 16 even parts and rolling each in the palm of your hands to set aside.

6. In a small bowl, beat the 2 eggs and in another one the breadcrumbs. One by one, dip each fish ball in the eggs and then roll in the breadcrumbs.

7. Grease the air fryer basket (or an oven-proof baking tray) with a touch of olive oil, then gently place the bowls on top and drizzle with a touch of olive oil. Cook for 12 minutes in the air fryer (16 minutes in the oven) or until the fish balls are golden brown and crispy.

8. While the fish balls are cooking, prepare your preferred sauce by mixing all ingredients together in a small bowl.

9. Serve the balls with your sauce.
