Ingredients (for 2 people)
- 1kg of mussels
- 100ml of double cream
- 100g of chorizo
- 1 tbsp butter
- 1 large red onion,
- 3 garlic cloves
- ½ tsp of chilli flakes
- Handful of parsley
- Sea salt and freshly ground black pepper
- 2 sourdough bread slices
Method:
- Heat a large saucepan on a medium heat. Toss in the chorizo and let it shimmy until golden and full of flavour. Set aside.
- Melt the buttery in the pan, then add the shallot and garlic to cook for 2 minutes or until transparent
- Add the mussels and splash with the cider, give it a shake and then cover with a lid to steam for 5 minutes until the mussels open.
- Stir in the cream, parsley and chilli, chorizo, then season with sea salt and pepper to taste
- Serve this flavour-packed fiesta with toasted sourdough slices – your sauce-mopping superheroes.
