Mussels with cider, cream & chorizo

Ingredients (for 2 people)

  • 1kg of mussels
  • 100ml of double cream
  • 100g of chorizo
  • 1 tbsp butter 
  • 1 large red onion,
  • 3 garlic cloves
  • ½ tsp of chilli flakes
  • Handful of parsley
  • Sea salt and freshly ground black pepper 
  • 2 sourdough bread slices


Method:

  1. Heat a large saucepan on a medium heat. Toss in the chorizo and let it shimmy until golden and full of flavour. Set aside.
  2. Melt the buttery in the pan, then add the shallot and garlic to cook for 2 minutes or until transparent
  3. Add the mussels and splash with the cider, give it a shake and then cover with a lid to steam for 5 minutes until the mussels open.
  4. Stir in the cream, parsley and chilli, chorizo, then season with sea salt and pepper to taste
  5. Serve this flavour-packed fiesta with toasted sourdough slices – your sauce-mopping superheroes.
  6. Enjoy!
