Whether it’s a campfire, holiday home, or back garden BBQ, capture the essence of summer with this BBQ grilled whole sea bream, foil-wrapped in a deliciously fragrant marinade.
Ingredients:
- 1 fresh sea bream
- 1 garlic clove, crushed and sliced lengthwise in two
- 1 lemon, sliced
- 1/2 bunch fresh parsley
- Extra virgin olive oil
- 1 knob of butter
- Sea salt and freshly ground black pepper
Method:
1. Heat the BBQ to medium high
2. Rinse fish inside and out with cold water, pat dry with kitchen paper towel
3. Season the cavity with salt and pepper, then stuff lemon, garlic and parsley
4. Brush the fish skin with olive oil and generously season with salt and pepper,
5. Place the fish on a loose square of aluminium foil and sprinkle some parsley and butter on top before rolling the foil into a pouch, leaving a finger-sized gap at the top
6. Place on the grill for 12-18 minutes depending on size of the fish. Check it's cooked by opening the foil wider
