Time to fire up the BBQ. Enjoy this gorgeous whole sea bass with a side salad or keep the Mediterranean theme with a side of fregola (a type of light pasta from Sardinia) or giant couscous.
Serve with a side sauce like mayonnaise or aioli.
Ingredients
- 1 whole sea bass, gutted
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 garlic clove, peeled and thinly sliced
- 4 tablespoons extra virgin olive oil
- Fresh parsley or thyme
- 1 lemon, sliced

Prepare the Fish:
- Rinse the sea bass under cold water and pat it dry with paper towels.
- Make a cut at the bottom of the fish, running a knife through the bones towards the tail, just the size of an index finger. Then, make 3-4 slits on one side of the fish.

Season the Fish:
- Season the skin generously on both sides with salt and pepper.
- Open up the bottom cavity wider and insert 3 lemon slices, the sliced garlic, and the fresh herbs. Sprinkle a little bit of salt and pepper inside (don’t over-season) and add 2 tablespoons of olive oil.

Prepare the Grill:
- Preheat your BBQ grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

Grill the Fish:
- Drizzle the rest of the olive oil over the fish.
- Place the fish on the grill with the side with slits facing up.
- Cook for about 6-8 minutes on each side, or until the fish is cooked through and the flesh flakes easily with a fork. Use a large spatula to carefully flip the fish halfway through cooking. If the fish sticks, give it a little more time before flipping.

Optional: Grilled Potatoes:
- If you'd like to include the tip for potatoes, pre-cook sliced potatoes (about 2 cm thick) in boiling water for 10 minutes.
- After boiling, drizzle with olive oil and place them on the grill alongside the fish, turning occasionally until they are golden and crispy.

Serve:
- Remove the fish from the grill and transfer it to a serving platter.
- Garnish with additional fresh herbs and serve with lemon wedges on the side.
