Freshness is the key to success here. Make sure to order our sashimi-grade salmon and enjoy it on the day it is delivered in this gorgeous Summer dish. Serve with some tortilla or plantain chips, and a glass of orange or white wine.
Ingredients:
- 2x 130g sashimi-grade salmon fillets or whole side
- 1 fresh red chilli, finely chopped (remove some seeds if you don't like heat)
- 1/2 lime
- 2 tbsps extra virgin olive oil
- Sea salt and freshly ground back pepper to taste
- Fresh herbs such as fresh oregano, marjoram or mint (make sure it's fresh herbs so they don't over-power the fish)
Method:
1. On a chop board, delicately remove the skin of the salmon fillets with a sharp knife, then cut them into thin slices and laying them on a large serving plate
2. In a bowl, finely zest 1/2 a lime and squeeze its juices, then add 2 tbsp of extra virgin olive oil and mix. Pick a few leaves of your fresh herbs (reserving some for garnish) and add them to the lime, then season with sea salt and freshly ground back pepper to taste before mixing everything together
3. Spoon the marinade over the salmon slices, then give it another extra virgin oil drizzle and garnish with some more herbs
4. Enjoy!
